If I already have an OverseerEd account do I need to use the link I get sent by another organisation?

Yes you do. 

To connect your user profile to the new education institute you need to accept the invitation sent from that organisation.

This will mean when you submit your work (through the publish process) it will go to the correct education provider.

Also the education provider will have you as a student in their list.
